The Beans and Recipes

Green Lentils
The oldest cultivated bean. It plays a huge part in Indian cooking but also in many dishes of Europe and the Middle East. There are four main distinct types (plus regional variations):
  1. Common brown/green: your all purpose rustic lentil, when you want something that gets tender enough to be mashed but can still hold its shape if you'd like.
  2. Red/orange (aka split, Egyptian, massor dal): It cooks quickly and collapses to a golden, easily digested mush, making it perfect for dals.
  3. French green (du Puy): A small lentil that stays firm, making it traditional in cold marinated salads. Brown varieties that are similar in Italy and Spain are Castelluccio/Umbrian and pardina, respectively.
  4. Black: Named "Beluga" by one company because it looks like caviar, meaning you can soak it in a brine to evoke just that thing – or use it anywhere you'd use the du Puy.

Adzuki Beans
Little red beans native to Asia, where they are traditional in making sweets. Related to mung beans, they have a smooth texture and a sweet, nutty flavor.
