Tanya's Squash Muffins
Whisk together in a big bowl:
- 2 Cup whole wheat flour
- Cup other flour
- 2 tsp baking powder (sifted)
- 1 tsp baking soda (sifted)
- 1 Tbsp cinnamon
- tsp ginger
- tsp allspice
- tsp cloves
Blend liquid ingredients:
- 2 Cup pumpkin or squash
- Cup applesauce
- Cup maple syrup
- 1 tsp vanilla
- 1 Cup plant milk
Add liquid ingredients to big bowl along with:
and mix only until combined.
Makes ~18 muffins.
Bake at 350° for 32-37 minutes.
