Pizza Dough
Ingredients
- 2 1/2 cups whole wheat berries ground into flour
- 2 teaspoons active dry yeast
- teaspoon salt
- 1 cups warm water (no more than 110 °).
- 1 tablespoon extra virgin olive oil
- 1 tablespoon sugar
Directions
- In a large bowl, combine yeast, water and 1 tsp sugar. Let sit for five minutes to "proof" the yeast.
- Combine 2 cups flour, salt and remaining sugar in another bowl
and incrementally add it to the yeast mixture mixing well.
- Add olive oil midway in the process.
- Keep adding more flour until the dough will not absorb any more.
Then turn it out onto the counter and knead by hand for about 5 minutes.
Keep adding flour in 1 Tbsp increments until it is no longer "sticky".
- Wash the large bowl and drip a few drops of olive oil in the bottom.
Smoosh it around. Shape dough into a ball, place it in the bowl and cover
with a moistened towel. Place in a warm (110 °) place - like an oven
that you heated up for a minute or two.
In about 45 minutes to 1 hour the dough will
have risen to twice the original volume.
- Punch down the risen dough, shape into a rectangle and place
it on a baking sheet covered with parchment paper.
Keep spreading it to the edge and make a little raised border
(to contain the tomato sauce you will spread on it).
Let rest about 10 minutes to let it rise a bit more.
- Spread tomato sauce over the surface and then artfully arrange:
- vegan cheeze
- sliced mushrooms
- red onions
- artichoke hearts
- roasted brussel sprouts
- sliced bell pepper
- dried tomatoes
- dried eggplant
- etc
- Preheat oven to 400°F. Place pizza in oven and bake about 15-20 minutes
or until crust is golden brown and toppings are baked.
Let pizza rest for about 5 minutes before slicing.
- Serve topped with arugula (optional) and red pepper flakes (to taste).
