Peach Pecan Ice Cream
Toast Cup pecan pieces for 4 minutes at 350F.
Then chill in fridge.
Blend at high speed until very smooth:
- 1 Cups water
- Cups cashews
- 2 Cups peaches sliced
- Cups medjool dates diced and packed
- 2 Tbsp grated ginger
- 1 lemon - juice and zest
Put blender in fridge to chill for at least 1 hour.
Have ready:
Turn the blended mix in ice cream freezer.
Towards the end of the turning slowly add the pecans and chopped peaches.
Quickly put in small containers and store in freezer.
