Okara Brownies
Sift together in a large bowl:
- 1 Cup whole wheat flour
- Cup coconut sugar
- Cup cacao powder
- 1 tsp baking powder
- tsp salt
In a medium bowl combine:
- 1 Cup okara
- Cup non-dairy milk (or more or
less if needed - you don't want the mixture to be too moist - you
want just enough liquid to mix nicely into the flour/sugar)
- 1 tsp vanilla
Preheat oven to 350 ° F
Fold/mix wet into dry - but DO NOT overmix as this will develop the gluten and make the brownies too chewy and 'tough'.
Then fold/mix in:
- Cup chopped walnuts
- Cup baby oats (or normal rolled oats buzzed in blender or food processor)
Optionally press Cup chocolate chips into the top of half of the brownies for those who like a little more chocolate and a little more sweetness.
Pour/spread into 8"x8" pan.
Bake for 18-25 minutes, test for doneness by inserting toothpick.
Let cool, slice, serve.
