Sweet Potato Fudge
- cup mashed cooked sweet potato
- 7 ounces dark chocolate bars
- teaspoon salt
- Cup maple syrup
- 2 tablespoons creamy plant milk (soy is good)
- teaspoon ground chipotle spice
- teaspoon cinnamon
- teaspoon vanilla
All at room temperature
- Pack sweet potato in a measuring cup, put in food processor
- Break up and then melt chocolate in a double boiler
- add salt to chocolate, stir, and then add both to the food processor
- Process the mixure well until very smooth
- Add maple syrup, milk, chipotle, cinnamon and process again
- Add vanilla, process once more
- Line pan with plastic wrap, put fudge in pan, press down, cover it all with plastic
- Refrigerate for several hours or overnight
- Cut into small cubes
