Garlicky Gigante Bean Spread

Corona beans can be used in place of gigante beans.
This spread is also called Skordalia.
- 1 1/4 Cups roasted unsalted almonds
- 1 1/2 Cups cooked gigante beans, drained but not rinsed
- 10 garlic cloves (or maybe fewer!)
- 1/3 Cup extra-virgin olive oil
- 2 Tablespoons lemon juice
- 1/2 teaspoon kosher salt
- 1/2 Cup cashew or almond milk yogurt
- 1/2 teaspoon finely grated lemon zest
Put the almonds in a food processor and pulse a few times
to break up. Add all the other ingredients and purée until
incorporated but still a little chunky.
Serve as a dip, as a base for roasted vegetables, or as a sandwich condiment.
