Sweet Potato Fudge

All at room temperature
  1. Pack sweet potato in a measuring cup, put in food processor
  2. Break up and then melt chocolate in a double boiler
  3. add salt to chocolate, stir, and then add both to the food processor
  4. Process the mixure well until very smooth
  5. Add maple syrup, milk, chipotle, cinnamon and process again
  6. Add vanilla, process once more
  7. Line pan with plastic wrap, put fudge in pan, press down, cover it all with plastic
  8. Refrigerate for several hours or overnight
  9. Cut into small cubes
