Chop an assortment of vegetables into bite-size pieces and combine.
- Red, yellow, and orange bell peppers
- Avocado (coat with lemon juice before combining with other vegetables, so that the cut surfaces will not turn brown)
Lemon Tahini Dressing
Add lemon juice, salt, pepper, thyme to the tahini.
- 16 oz organic tahini
- Juice of 2 lemons
- 1 tsp salt
- 1 tsp pepper
- 2 tsp thyme
Stir well, it will become very thick.
Thin with soymilk to pouring consistency.
